How do we define education?

After reading Will Richardson's blog, I find myself agreeing. I remember thinking how odd it was that conference attendees learn about web 2.0 tools in a sage on the stage format. There are timed workshops in familiar school-like spaces. These workshops paradoxically focus on the paradigm shift away from industrial age schools. But those digital-age schools are not modeled. Are we digital immigrants so inculcated in the traditional school that we cannot break out of it? If we cannot break free, how can we expect our children to do so? I don't know what a better format looks like.
